My business came about as a result of me suffering a severe allergic shock which left me hospitalised. I was put on an exclusion diet to identify what was causing the problem. Wheat was one of the foods excluded. I began baking with spelt flour instead of wheat. Having reared six children I was well used to baking as most women of my generation are!

My first customer was the local health food shop and so a cottage business was born as I baked weekly for them. The next step came about when my daughter Lorraine nominated me for ‘Recipe for Success’, a competition run by SuperValu and RTE. After reaching the final of the competition I was contacted by stores and consumers nationwide looking for my breads.

I could not meet the demand for the bread from my kitchen so I developed a pre-mix range of bread mixes which the customer bakes at home. I currently have a range of bread mixes and a flapjackmix with more coming soon!
